The main source of Hong Kong Hairy Crabs is from a freshwater lake in China's Jiangsu province known as Yangcheng Lake. The best hairy crabs to eat should weigh at least 200 grams and should be eaten from bone to bone to get all the best flavours. Traditionally, hairy crab season runs through the eighth, ninth and tenth months of the lunar calendar with the season peaking in October.
